Ingredients:
250g Cherry Tomatoes
5 slices sourdough
1-2 Burrata cheese
Blu Estate Classic EVOO
Salt & Pepper
Sprigs of Thyme
1 large Garlic clove

Method:
1. Preheat oven to 160oC. Wash cherry tomatoes and finely slice garlic.
2. For the tomato confit: Add cherry tomatoes to a small lined baking dish or casserole dish. Season with salt and cracked pepper. Using Blu Estate’s Classic EVOO pour into dish until the tomatoes are ¾ covered. Add garlic and thyme sprigs to dish and ensure they are submerged into the oil.
3. Place into the oven to cook for 35 minutes.
4. 10 minutes before the tomato confit is ready, prepare sourdough. Lightly drizzle both sides of each piece with Blu Estate’s Classic EVOO and place into hot pan. Sourdough should be slightly golden on both sides. Transfer sourdough slices onto serving dish. Cut open Burrata cheese and place spoonful’s of the inside of the Burrata onto each slice of sourdough.
5. Remove confit from oven and distribute the cherry tomatoes with minimal oil onto the prepared sourdough. Garnish with thyme sprigs.
