Ingredients

Blu Estate Classic extra virgin olive oil

4 large potatoes (cut into wedges)

In season vegetables (we used tomatoes, capsicum and eggplants)

350 grams aborio rice

1 onion, chopped finely
-
400 ml water
-
2 cloves garlic, chopped finely or mashed
-
1 tbsp tomato paste
-
1 zucchini, grated
-
Handful of parsley, mint and dill, chopped finely
Method

Preheat your oven to 180 degrees.

Carefully slice the bottom of the tomatoes and scoop out the filling into a bowl. Place the emptied tomatoes with their lids into a large baking dish. Repeat for all the vegetables you are using. Discard the inside of the capsicum, however for the eggplant, chop the insides finely and add to the bowl with the tomatoes.

Add the potato wedges to the baking dish.

For the filling: Place a pan over high heat and add 3-4 tbps of Blu Estate EVOO. Add the onions and the garlic and saute until fragrant and translucent

Season very well with salt and pepper, and add the rice. Saute for a couple of minutes til slightly golden.

Add the tomato paste and saute.

Add the water and reserved tomato and eggplant. Allow to simmer for 5 minutes (the rest of the cooking will be done in the oven)

Remove from the heat, add the fresh herbs and stir well. Add a generous drizzle of Blu Estate EVOO, and season to your liking.

Using a spoon, add the filling into the vegetables (not all the way full) and close them with their respective lids. Any leftover filling can be added on top of the potatoes for extra flavour.

Add approx 200ml of water into the baking dish and drizzle with Blu Estate EVOO.

Cover with foil and bake for one hour.

Remove the foil and bake for a further 20 mins to ensure all the water was evaporated. Your veggies should be cooked through and golden.
