Ingredients

2 pieces of fresh cod

5 small potatoes, sliced

a handful of parsley, finely diced

1 large white onion, sliced

Method

Pre heat your oven to 180 degrees.

Rinse cod under water and set aside to dry on a paper towel.

line a baking tray with baking paper and arrange your potatoes and onion along the tray, season with a generous amount of EVOO and salt.

Rub cooking salt and EVOO onto the skin of the cod.

Place your cod pieces on top of the potatoes (skin facing up) and place tray into the oven for 45-60 minutes.

sprinkle a generous amount of parsley when plating up.
