Rosemary Potato Smash baked with Extra Virgin Olive Oil

Boil, smash a generous drizzle of Extra Virgin Olive Oil and bake on high to create these delicious smashed potatoes. All the necessary steps listed below for you to create the perfect side to just about any meal.

This is a serving 3-6, multiply ingredients to make additional servings.

Ingredients

  • 6 white potatoes

  • Dried rosemary

  • Himalayan salt

  • Blu Estate Classic Extra Virgin Olive Oil (EVOO)

Method

  1. Preheat oven to 180 degrees on fan forced.

  2. Bring a pot of water to boil, cook your potatoes until they are soft, this could take up to 20 minutes.

  3. line your oven tray with baking paper, and set aside.

  4. Drain your potatoes once they are soft, and allow them to dry in a drainer for 5-10 minutes.

  5. place your potatoes on your lined oven tray, and using a butter knife create a criss cross effect marking across the top of the potatoes.

  6. Drizzle your potatoes with EVOO, and season by sprinkling your rosemary and salt over the top. if you do not have any dried rosemary skip this step, and head to point 7 of this recipe.

  7. you may also drizzle a small amount of Blu Estate Rosemary Infused Extra Virgin Olive Oil over the top of your potatoes, to create more depth to your flavours.
