Roast Vegetable Medley

why is it everything taste better baked in the oven, all I know is I have never regretted baking vegetables as opposed to steaming them. Its quick and easy to prepare this meal, and your stove top stays nice and clean. Don't cheat on the oil you use, using a quality and Australian fresh extra Virgin Olive Oil goes a long way when it comes to baking.

 

Ingredients:

6-8 Potatoes, peeled & halved

3-4 Carrots, peeled & halved

1 large Beetroot, peeled & thinly sliced

¼ cup Blu Estate Reserve Quality EVOO

Salt & Pepper to taste

 

Method:

1.     Prepare vegetables and add to a bowl. Coat with Blu Estate’s Reserve Quality EVOO and season with salt and pepper. Combine well.

2.     Place onto a lined baking dish, drizzle any remaining oil from the bowl over the vegetables. Place into a preheated oven (180oC). Bake until vegetables are tender and golden.

3.     Serve and enjoy.
