Porterhouse with pepper pine nut rice

 

Here is a way to make ordinary brown rice taste and look amazing, using our quality Australian Extra Virgin Olive Oil. 

 

This is a serving for 2-3, multiply the ingredients to make additional servings.

 

Ingredients

  • 3 cups of brown rice

  • 1 piece of porterhouse steak

  • yellow mini peppers

  • a generous handful of pine nuts

  • Blu Estate Reserve or Classic Extra Virgin Olive Oil (EVOO)

 

Method

  1. Rinse your rice under water, then place into a pot of boiling water, season with a pinch of cooking salt, maintain the boil for 30 minutes, drain the remaining water and return your rice to the pot, cover with a lid and cook on low for 10 minutes.

  2. Heat a pan or barbecue on medium, cook the porterhouse on medium heat for 3 mins each side for a medium well cook, you may remove the steak earlier for a rare finish, set aside to slightly cool before slicing into strips.

  3. Heat a pan of EVOO and add your sliced mini yellow peppers, once browning add your pine nuts, remove and set aside.

  4. Pour the rice into a serving deep plate, place the porterhouse strips and peppers over the rice and sprinkle the pine nuts over the top.
