Pesto baked potato

Love pesto but didn't realise just how easy it is to make, go on and see how we make it. Home made pesto created in one easy step.

This is a serving 3-6, multiply ingredients to make additional servings.

Ingredients

  • 6 white potatoes

  • Himalayan salt

  • Blu Estate Classic Extra Virgin Olive Oil (EVOO)

  • 1/4 cup of pine nuts

  • 1 1/2 cups fresh basil leaves

  • 1 large garlic clove

  • 3/4 cup grated parmesan

Method

  1. Preheat oven to 180 degrees on fan forced.

  2. Bring a pot of water to boil, cook your potatoes until they are soft, this could take up to 20 minutes.

  3. line your oven tray with baking paper, and set aside.

  4. Drain your potatoes once they are soft, and allow them to dry in a drainer for 5-10 minutes.

  5. place your potatoes on your lined oven tray, and using a butter knife create a criss cross effect marking across the top of the potatoes, and drizzle with EVOO and sprinkle salt over the top.

  6. Bake in oven for 15 minutes on grill.

  7. Place the pine nuts, basil, garlic, EVOO and parmesan in the bowl of a food processor and process until

  8. Remove Potatoes from the oven once golden, and drizzle pesto over the top of the potatoes.
