1 tsp of Pecorini

3 eggs

a handful of parsley

sprinkle of salt and pepper

Blu Estate Reserve EVOO
Method

In a bowl whisk together all ingredients, excluding the EVOO.

Heat the EVOO in a pan on low, then add your omelette mixture and allow 2-4 minutes for the bottom to brown in colour, once golden flip over your omelette and repeat.

Finish by drizzling a small amount of Blu Estate EVOO over the omelette.
