Pecorini & Parsley Traditional Calabrese Omelette

Let us show you how the simplest of ingredients can go a long way in flavour. This traditional to Calabria omelet is so delicious I doubt you will have them any other way again. All you need is a handful of ingredients and our Australian quality Extra Virgin Olive Oil.

This is a serving for 1 - 2 people, multiply ingredients to make additional servings.

 

Ingredients

  • 1 tsp of Pecorini

  • 3 eggs

  • a handful of parsley

  • sprinkle of salt and pepper

  • Blu Estate Reserve EVOO

Method

  1. In a bowl whisk together all ingredients, excluding the EVOO.

  2. Heat the EVOO in a pan on low, then add your omelette mixture and allow 2-4 minutes for the bottom to brown in colour, once golden flip over your omelette and repeat.

  3. Finish by drizzling a small amount of Blu Estate EVOO over the omelette.
