This is a serving for up to 6 people.
Ingredients

1/4 cups Blu Estate Reserve EVOO

1 cup of raw sugar

2 cups of cake flour

1/3 cup almond flour

2 teaspoons of baking powder
-
1/2 teaspoon of baking soda

1/2 teaspoon of salt
-
2 teaspoons of vanilla extract

3 large eggs
Method

Preheat oven to 200C, coat your baking tin with Blu Estate EVOO, using your fingers to ensure it is coated across the base and sides if tin.

Coat the inside of each bundt cake tin with Blu Estate EVOO.

Whisk together the cake flour, almond flour, baking powder, baking soda and salt in a bowl, ensure you whisk away any lumps.

in an electric mixer whisk the eggs, 1 cup of raw sugar for 3-5 minutes, until the mixture is soft and light.

Turn the mixer on high and pour in 1 1/4 cup of Blu Estate EVOO until your mixture thickens.

Pour your batter into each tin and place in oven, reduce oven tempreture to 160C. Bake for 30-45 minutes or until the top is golden. Test the centre of each cake by poking the cakes with a fork, if there is no cake residue on the fork the cakes are ready.

Remove the cakes from the oven, and move them all onto an oven rack, set aside to cool for 15 minutes.

Finish by drizzling 3 tbsp of Blu Estate EVOO over the top of the cakes, set aside for a day.

The day you serve your cakes dust some icing sugar over the top.
