Lime & Extra Virgin Olive Oil Cake

Ok you may or may not have used a quality Extra Virgin Olive Oil instead of butter in a cake recipe, prepare to be pleasantly delighted as you create this delicious light, fluffy and easy to prepare Olive Oil cake. Packed with double the amount of antioxidants, contained in Extra Virgin Olive Oil and blu berries.

 

This is a serving for up to 15 people depending on portion size.

 

Ingredients

  • 1/4 cups Blu Estate Reserve EVOO

  • 2 punnets of blueberries

  • 1 cup of raw sugar

  • 2 cups of cake flour

  • 1/3 cup almond flour

  • 2 teaspoons of baking powder

  • 1/2 teaspoon of baking soda

  • 1/2 teaspoon of salt

  • 1 tablespoon of finely grated lime zest

  • 3 tablespoons of fresh lime juice

  • 2 teaspoons of vanilla extract

  • 3 large eggs

 

Method

  1. Preheat oven to 200C, coat your baking tin with Blu Estate EVOO, using your fingers to ensure it is coated across the base and sides if tin.

  2. Line the base of the tin with baking paper and rub more Blu Estate EVOO on the paper.

  3. Whisk together the cake flour, almond flour, baking powder, baking soda and salt in a bowl, ensure you whisk away any lumps.

  4. Mix the lime juice and vanilla extract in a seperate bowl, set aside.

  5. in an electric mixer whisk the eggs, lime zest, 1 cup of raw sugar for 3-5 minutes, until the mixture is soft and light.

  6. Turn the mixer on high and pour in 1 1/4 cup of Blu Estate EVOO until your mixture thickens.

  7. Pour your batter into the pan and sprinkle the blueberries over the top of the mixture, place in oven, reduce oven temperature to 160C. Bake for 40-50 minutes or until the top is golden. Test the centre of the cake by poking the cake with a fork, if there is no cake residue on the fork the cake is ready.

  8. Remove the cake from oven, and move onto a oven rack, set aside to cool for 15 minutes.

  9. Finish by drizzling 3 tbsp of Blu Estate EVOO over the top of the cake, set aside and serve a day or two later for best results.
