Greek Spinach Rice (Spanokorizo)

A delicious, quick and easy meal perfect for week nights. This authentic Greek dish is absolutely delicious, it’s hard to believe it’s actually really good for you. Just remember to use a good amount of our Extra Virgin Olive Oil, we used the Reserve this time.

 

Ingredients

  • 4 tbsp Blu Estate Classic or Reserve extra virgin olive oil

  • 500 grams of spinach, washed and roughly chopped by hand

  • 150 grams aborio rice

  • 2-3 spring onions, chopped

  • Quarter leek, washed and finely chopped (white part only)

  • Half bunch of dill, chopped

  • Juice of 1 lemon

  • 1 tbsp tomato paste

  • 400 ml water (200ml room temperature, 200ml boiling hot)

Method

  1. Heat half the olive oil in a casserole pan on med-high heat. Add the onion and leek and saute until translucent

  2. Lower the heat and add the spinach and saute for about 5 mins until halved in size and wilted

  3. Pour rice and season well

  4. Pour half the water (room temperature), stir well. Simmer for about 20 mins, stirring occasionally so the bottom doesn’t stick

  5. Add the boiling water, stir well and turn off heat

  6. Pour the lemon juice, remaining olive oil, dill and tomato paste. Stire well

  7. Place a clean tea towel on top and let it rest for approx 10 mins

  8. Garnish with fresh lemon wedges
