Stuck in isoliation due to Covid 19, bored out of your brains, we've got it, follow these simple and easy steps to create this delicious banana bread everyone will love, we swapped out the use of butter and replaced it with our healthy Australian Extra Virgin Olive Oil. This also makes this loaf, fluffy and moist.

Now whatever you don't use, don't wait for it to go bad, store the left over loaf in the freezer and now you have the perfect last minute snack waiting to be defrosted, lightly toasted and served... 

Ingredients

  • 1/2 cup of Blu Estate Reserve EVOO

  • 3 ripe bananas

  • 2 cups all purpose flour

  • 2 tsp baking powder

  • 3 medium to large sized eggs

  • 1 cup brown sugar

  • 1 tsp vanilla extract

  • 1 cup brown sugar

  • 1 tsp ground cinnamon

  • 1 tsp salt

 

Method

  1. pre-heat your oven to 200C

  2. brush your loaf tin with Blu Estate Reserve EVOO.

  3. mash the bananas in a bowl, add the eggs, olive oil, and vanilla extract and mix.

  4. now add the flour, brown sugar, baking powder, salt in a different bowl and Mix together. be sure to mix the sugar well to avoid clumps.

  5. Now combine all ingredients together and mix.

  6. pour your mixture into the loaf tin.

  7. bake for 50-60 mins, test the centre by using a skewer or fork, if you remove the tool and its clean then your bread is ready.

  8. Remove from the oven and place your bread on a tray to cool for up to 20 minutes, slice and serve with a drizzle of honey.
