Talk about caramelised flavours, and making veggies the winner at the dinner table. your kids won't know how you did it but these vegetables are packed with flavour and oh so yummy.

Ingredients:
1kg small potatoes, quartered or halved
200g Asparagus, snapped into thirds
Blu Estate’s Garlic Infused EVOO
4-6tbsp Balsamic Vinegar
Salt & Pepper to taste

Method:
1. Preheat oven to 180oC.
2. Wash and prepare potatoes. Place into an oven-safe baking dish. Add balsamic vinegar and a generous drizzle of Blu Estate’s Garlic Infused EVOO. Add salt & pepper to taste. Toss the potatoes to ensure they’re entirely coated. Cover with foil and bake for approx. 30 minutes. After this time remove foil and check if the potatoes are tender. The cooking time will depend on the size of the potatoes, you may need to adjust cooking time.
3. Once the potatoes are tender add the asparagus. Add more EVOO is required. Continue to cook, until potatoes are golden and asparagus are tender.
4. Serve and enjoy alongside your favourite chicken or fish dish.
