Ingredients:
Dough:
2 cups plain flour
1 cup plus
2tbsp room temperature water
1 tbsp white sugar
1 tsp salt
1 tsp instant dry yeast
1 tbsp Blu Estate Classic EVOO
Sweet version:
White sugar
Cinnamon (optional)
OR Icing Sugar
Savoury Fillings:
Mozzarella, cubed
OR
Anchovies
To fry:
EVOO
Method:
- mix all dough ingredients together, cover and allow to rise until doubled in size (approximately 2hours).
- Heat oil to medium-high heat. The oil should be hot, and the dough must sizzle.
- Using an oiled hand, grab the dough and form balls by squeezing portions of dough between your thumb and index finger. Use an oiled teaspoon to scoop the ball of dough and place into the hot oil. Fry until golden and then drain on paper towel.
- Adjust the oil heat as necessary.
To make filled fried dough:
Take a piece of mozzarella or anchovy and enclose in the dough. Again, use an oiled spoon to scoop the ball and place into the hot oil. Once golden, drain on paper towel.
For the sweet dough:
Once drained you can either toss in white sugar and cinnamon or dust with icing sugar. Serve all fried dough hot. Enjoy
