Saganaki Prawns

Ingredients:

500g King Green Prawns – peeled & deveined (tails kept intact)

300-400g Passata or crushed tomatoes

Blu Estate’s Classic Everyday Extra Virgin Olive oil

1 onion – diced

1 garlic clove – finely chopped

1/2 cup White wine

1/2 cup water

Handful of fresh Parsley – chopped

Feta Cheese – to your liking

Salt & Pepper to taste.

 

Method:

  1. In a deep saucepan on medium-high heat, pour in about 1/4c of Blu Estate’s Classic Everyday Extra Virgin Olive Oil and sauté onion and garlic until fragrant and golden.
  2. Add Passata or crushed tomatoes to pan, bring to a simmer then add the white wine and cook out the alcohol. Add water, let simmer for a few minutes. Season with salt and pepper.

  1. Reduce the heat and leave the sauce to cook down until the sauce thickens. Add parsley leaving some aside to garnish) and stir in. Taste the sauce and make seasonal adjustments as required.
  2. Add the prawns and place the lid back on to steam for approximately 2 minutes, remove lid and gently rotate the prawns to coat entirely with the sauce. Place the lid back on to allow to prawns to cook through (roughly 1-2 minutes).
  3. Turn off the heat, garish with the remaining parsley and crumble Feta cheese over the top.
  4. Serve immediately with crispy Pita bread or warm crusty bread.
