Ingredients:
1 medium Eggplant, sliced lengthways
Blu Estate’s Classic Everyday EVOO
Handful of freshly chopped Parsley
Salt & Pepper
Optional:
1 garlic clove, finely chopped
Method:
- To prepare eggplant, rinse and then slice lengthways approx. 1cm thick. Place the sliced eggplant onto a board and sprinkle with salt to draw out any bitterness.
- In the meantime, chop fresh parsley and mix in a bowl with Blu Estate’s Classic Everyday EVOO, salt & pepper to taste.
- 5-10 minutes are initial salting of eggplants: Rinse the eggplant slices and pat dry.
- Heat a grill pan. Brush one side of the eggplant slices with the parsley & oil. Place onto the hot grill pan. Grill until golden with slightly charred grill lines. Before turning over to cook the upside, brush with parsley & oil mix.
- While continuing to grill, you can brush more oil/parsley mix over the already-cooked side.
- Once eggplant slices are cooked, place on a serving plate and enjoy.
