Ingredients:
1.2kg Roast Pork Loin
Butterflied Handful of fresh parsley
5g fresh Sage leaves
5g fresh Thyme leaves
1 large Garlic clove
1-2 large Spring Onions
Salt & Pepper

Method:
1. Preheat oven to 150°C.
2. Pulse herbs, Garlic and Spring Onions in a food processor to a finely chopped consistency.
3. Open butterflied pork and drizzle blu estate evoo Reserve quality, and rub in. Season with salt & pepper. Evenly distribute the green herb mixture. Roll the pork tightly and secure with butchers twine.
4. Add a light drizzle of EVOO to the skin of the pork and a generous sprinkling of salt, rubbed in. Place onto a rack in a lined baking dish and place into the oven to slow roast for approximately 1hr and 45 minutes to 2hours.
5.Now for the crackle: Change the oven settings to Grill and to the highest temperature. Keep an eye on the crackle so it doesn’t burn. Remove once crispy.
6. Serve with apple sauce along with your desired sides. *be mindful cooking time will vary depending on the size of the pork roast.
