Baked Snapper Fillets

Ingredients:
5 small king snapper or red snapper fillet portions
1 large onion, thinly sliced
1 large garlic clove, thinly sliced or chopped
1-2 punnets mini coloured tomatoes
Blu Estate’s Classic EVOO
Salt & Pepper to taste



Method:
1. Rinse fillets under cold water and pat dry.
2. Arrange the fish portions into a lined baking dish, add a drizzle of Blu Estate’s Classic
EVOO, tomatoes, garlic and onion, followed by seasoning with salt and pepper. Add
another drizzle of EVOO over the top.
3. Gently shake the dish to toss ingredients.
4. Cover with foil and place into a pre-heated (150oC) oven for approximately 40
minutes or until the fish is cooked through. *cooking time will vary depending on the
size of the fillets you are using.
5. Once ready, remove from oven. Serve and enjoy.
