Evelyns Tomato & Fetta Galette
This is a serving size of 4-6
10 minutes is all you need to prepare this delicious and colourful Galette, perfect for shaking up the traditional weekly meals or when unexpected guests pop over.
1 sheet of Puff pastry
1 small block of Fetta cheese, rinsed
1 - 2 punnets of cherry tomatoes
(you can use an assortment of baby tomatoes or just one)
Fresh basil leaves to garnish is optional.
Blu Estate EVOO, you may use the Classic or Reserve
Preheat oven to 180°, and begin by lightly coating your baking tray with Blu Estate EVOO.
Remove the plastic film from your puff pastry, and lay flat.
Create your crust by gently folding your square pastry sheet in towards the centre, creating a circle shape.
Brush your Blu Estate EVOO over the crust of your pastry, and place in the oven for a few minutes.
Slice your tomatoes in halfs, and set aside.
Break up your fetta cheese using your hands, and set aside.
Remove your pastry from the oven, and scatter your tomatoes and fetta across the centre of the pastry, as displayed in our images.
Drizzle Blu Estate EVOO over the tomatoes and fetta, and sprinkle some salt and pepper.
Place your pastry back into the oven for 20 minutes or until golden.
Once your Galette is ready, remove from the oven and set aside for a few minutes before slicing pieces.
You may garnish with Basil, which also tastes delicious.
