Anita's Mixed Cherry Bruschetta


This is a perfect pre dinner snack when entertaining guests, as well as a good way to satisfy a sweet craving, with healthy Australian produce.

This is a serving of 2, multiply the ingredients to make additional servings.


  • 1 Punnet of cherry & grape mixed tomatoes

  • A sprinkle of pink himalayan salt

  • Blu Estate Extra Virgin Olive Oil (EVOO)

    (using our Reserve EVOO will give this dish a rich olive flavour, our Classic EVOO will deliver a soft olive flavour)

  • 2 slices of Pane de casa bread


  1. Place your cherry tomatoes onto an oven tray, and drizzle your Blu Estate EVOO and a sprinkle of salt.

  2. Set your oven settings to grill on 180 degrees.

  3. Place your Pane de casa slices on a seperate tray inside your oven.

  4. once your cherry tomatoes begin to soften and appear slightly golden, remove from oven and set aside to cool down.

  5. Remove your pane de casa once your slices have browned on both sides.

  6. Drizzle a small amount of your Blu Estate EVOO over the bread, then place your roasted cherry tomatoes over the slices of pane de casa.

Flavour everything with Blu Estate EVOO and love.
